A good warm heartening soup for a cold wintery day always lifts up your mood as the warmth perpetuates throughout your body. Chicken soup is also known to have some strong anti-inflamatory and immune boosting characteristics so I gave it a go and added some noodles… why? Cause you only live once.
Leeks, celery and carrots made the base of the stock but I sacrificed a chicken wing to increase the flavour. To serve, I added salt, pepper, chillis and a mixture of 2/3 soy to 1/3 vinegar and it was supperb.
The dish reminds me of mum’s wontons without the tons.
